Mayville State hosts Fisher High School advanced biology students

While it may sound like something from a nursery rhyme, there was no Little Miss Muffet, a tuffet or spider involved when 15 advanced biology students from Fisher (MN) High School participated in a biology lab at Mayville State University on curds and whey.

Performing an experiment on curds (cottage cheese) and whey (the liquid portion of cottage cheese), the Fisher High School students conducted a lab entitled “Rennin in Action,” which demonstrates how enzymes can be used to prepare a human food product. An enzyme called rennin is produced in the stomachs of infant mammals and coagulates casein, a milk protein. Rennin is also used commercially to prepare cottage cheese.

“The experiment allows students to watch an enzymatic reaction taking place and then to run "hands-on" chemical tests on the products of the enzymatic activity,” said Mayville State University biology professor Dr. Robert Kruger, who led the students in the experiment. “As a result they learn what general types of nutrients are found in curds and whey. The experiment hopefully makes "enzymes" a little less abstract.

“Rennin in Action is interesting because the results are very visual. Students can watch the physical separation of curds and whey thanks to the action of the rennin enzyme. After rennin finished coagulating the curds and separating the whey, the two components were separated and chemical tests were run on each. The chemical tests are very colorful. The tests are designed to detect the presence of reducing sugars, proteins, and certain starches.”

The students were brought to campus by their high school teacher, Mr. Terry Baesler, a science teacher at Fisher High School. A graduate of Mayville State, Baesler was a student of Dr. Kruger’s while attending college. To prepare for the experiment, the Fisher High School students received copies of the lab in advance so they were able to understand the objectives and procedures prior to lab day, which is called "pre-lab."

“Students could anticipate what they were going to do but not exactly what the results would look like,” said Dr. Kruger. “This is the fun part of doing a lab. The Fisher students carried out the lab very proficiently and enthusiastically.”

The high school students were assisted by some MSU Biology students, including Amber Karlstad, Anthony Martinson, Jamie Bauer, and Scott Sjolin. Dena Bergstedt was in charge of setting up the laboratory materials and getting everything in order the day before the lab. Mayville State University President Pamela Balch and Mr. Baesler assisted the students. Following the lab students took a tour of MSU and had a chance to visit with Dr. James Mehus, local physician and MSU graduate, about pre-professional careers.

“We all had such a great experience,” said Anna Tinkham, a senior at Fisher High School. “It was fun to learn in a college environment and Dr. Kruger is a wonderful professor who is full of valuable information. I was impressed that the President of Mayville State was able to join us in the lab. It was fun to see that she is so personable and down to earth. It really showed that she cares about the college and its future.”

“This was a wonderful opportunity for students to learn a lesson outside of the high school setting,” said Mr. Terry Baesler, a science teacher at Fisher High School. “Dr. Kruger is an excellent professor who is able to bring exciting concepts to life for students. Each student was impressed with President Balch joining us for lab; it demonstrated a caring, close-knit family style atmosphere to the students. The students are fortunate in having a college and professor who are willing to accommodate high school students in the advancement of their education. Thank you for the experience.”
